Melanzane ripiene di riso light

Una classica ricetta rivisitata da me in una versione decisamente più leggera ma non per questo priva di gusto. 




Ingredienti per  6 persone:

3 melanzane grandi
300 g. di riso
2 uova
250 g. di prosciutto crudo
100 g. di parmigiano reggiano grattugiato 
400 g. di polpa di pomodoro 
1  spicchio d’aglio 
basilico
olio evo (io) biologico Tripodi
sale q.b.

Procedimento:

Cuocere il riso in abbondante acqua salata.

Accendere il forno a 200°. Lavare le melanzane,eliminare la parte superiore e tagliarle in due nel senso della lunghezza. Svuotarle estraendone la polpa con l’aiuto di un cucchiaio.
Disporre le melanzane private della polpa  nella vaporiera e cuocere per circa 10 minuti, trascorso il tempo  adagiarle su di una griglia e lasciarle raffreddare, salare internamente. Procedere con la preparazione del ripieno, mentre il riso ultima la cottura, tagliare la polpa delle melanzane a dadini . Soffriggere  leggermente l’aglio che dopo leverete con due cucchiai d’olio evo  ed aggiungere l’interno delle melanzane tagliate, dopo circa 5 min. salare e fare cuocere per altri 10 min. In un pentolino mettere sempre due cucchiai di olio evo e lo spicchio d’aglio che avete precedentemente utilizzato lasciandolo per circa 1 min. il tempo  che  prenda l’odore e poi levarlo. Aggiungere la polpa di pomodoro, salare e insaporire con del basilico tritato. Quando il riso sarà pronto, colarlo e aggiungere la polpa di melanzane,il prosciutto  crudo precedentemente tagliato a dadini e fatto cuocere in una padellina antiaderente senza niente per 2 min. il parmigiano grattugiato   lasciandone un pò da parte per spolverare la superficie delle melanzane. le uova  battute ,amalgamare il tutto .Infine aggiungere qualche cucchiaiata di salsa al ripieno.  Farcire le melanzane,e adagiarle su di una teglia rivestita di carta forno, e spennellata con un filo d’olio.  Aggiungere su di ogni melanzana un cucchiaio di salsa e  spolverare con il  restante parmigiano. Infine un filo  d’olio e infornare in modalità grill per circa 20 min. il tempo necessario per gratinare la superficie. Lasciare  intiepidire leggermente prima di servire.

Eggplant stuffed with rice light



Ingredients for 6 persons:

3 large eggplants
300 g . rice
2 eggs
250 g . of ham
100 g . of grated parmesan 
400 g . of chopped tomatoes
1 clove of garlic
basil
extra virgin olive oil ( I ) Tripodi biological
salt q.b.

Procedure:

Cook the rice in salted water .

Preheat oven to 200 degrees. Wash eggplant, remove the top and cut them in half lengthwise. Empty them extracting the pulp with the help of a spoon.
Arrange the eggplant pulp private in the steamer and cook for about 10 minutes after the time lay them on a grill and allow to cool , add salt internally. Proceed with the preparation of the filling , while the last rice cooking , cut the flesh of the eggplant into cubes. Lightly fry the garlic after that rise early with two tablespoons of olive oil and add the inside of the eggplant cut , after about 5 min. Season with salt and cook for another 10 min. In a small saucepan always put two tablespoons of extra virgin olive oil and a clove of garlic that you have previously used leaving for about 1 min. the time it takes the smell and then remove it . Add the chopped tomatoes , season with salt and the chopped basil . When the rice is ready , strain it and add the chopped eggplant, prosciutto previously cut into cubes and cook in a nonstick pan with nothing for 2 min. grated Parmesan leaving a little aside for dusting the surface of the eggplant. beaten eggs , mix well . Finally, add a few tablespoons of sauce filling. Stuff the eggplants and place them on a baking sheet lined with parchment paper, and brushed with a little olive oil . Add about a tablespoon of each eggplant sauce and sprinkle with the remaining Parmesan cheese. Finally a little olive oil and bake in grill mode for about 20 min. the time necessary to brown the surface . Allow to cool slightly before serving.
