Polpette di Tonno



Ingredienti :

50 g. di Olive denocciolate
240 g. di Tonno in scatola al naturale o in olio di oliva
3 fette di Pane in cassetta
1/2 bicchiere di Latte
4 filetti di Acciughe sott'olio
1 cucchiaio di Capperi dissalati
2 Uova
150 g di Pangrattato
1 ciuffo di Prezzemolo tritato
50 g. formaggio grattuggiato
2 cucchiai di Olio evo
Olio di arachidi o evo per friggere
Sale q.b.

Procedimento:

Sbriciolare il pane in cassetta. In una ciotola inserire le briciole e coprirle con il latte, dopo qualche minuto strizzarle per bene. Mettere nel mixer le olive denocciolate, i capperi, le acciughe, il tonno sgocciolato, il prezzemolo, l'olio evo ( solo se utilizzate il tonno al naturale ) e il sale non esagerando. Tritare bene il tutto, fino a quando il composto sarà ben omogeneo. Versare il tutto in una terrina, unire il pane ammollato e strizzato, amalgamare con il restante  uovo e impastare bene con le mani aggiungendo il formaggio grattugiato e se necessario un pò di pangrattato. Lasciare riposare l'impasto per qualche minuto magari in frigo per fare rapprendere meglio. Formare delle polpette con le mani e successivamente passarle nell'uovo sbattuto con un pizzico di sale e dopo nel pangrattato. Scaldare l'olio e quando sarà ben caldo friggere le polpette fino a doratura.

Tuna Meatballs

Ingredients:

50 gr. Pitted Olive
240 gr. Tuna canned in brine or olive oil
3 slices of Loaf
1/2 cup of milk
4 fillets of anchovies in oil
1 tablespoon capers desalted
2 Eggs
150 g Breadcrumbs
1 bunch of parsley, chopped
50 gr. grated cheese
2 tablespoons extra virgin olive oil
Peanut oil for frying or evo
Sale q.b.

Procedure:

Crumble the bread. In a bowl, add the crumbs and cover with the milk, after a few minutes to squeeze well. Put in a blender pitted olives, capers, anchovies, drained tuna, parsley, extra virgin olive oil (only if you use tuna in brine) and salt is not exaggerating. Chop everything well, until the mixture is evenly blended. Pour into a bowl, add the soaked bread and wrung out, mix with the remaining egg and mix well with your hands adding the grated cheese and some bread crumbs if necessary. Let the mixture stand for a few minutes in the fridge to coagulate even better. Shape into balls with your hands and then pass them in the beaten egg with a pinch of salt and then in the breadcrumbs. Heat the oil and when it is hot, fry the meatballs until golden brown.
